Tibetan Yak Meatball Tacos With Mango Salsa

Ingredients

  • 1 lb ground yak meat
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeno, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 8 small flour tortillas

Instructions

  1. In a large bowl, mix together the ground yak meat, chopped onion, minced garlic, cumin, coriander, turmeric, salt, and pepper. Form the mixture into small meatballs.
  2. Heat a skillet over medium heat and cook the meatballs until browned and cooked through, about 15 minutes.
  3. In a separate bowl, combine the diced mango, red onion, jalapeno, cilantro, and lime juice to make the salsa.
  4. Warm the tortillas in a dry skillet or in the oven.
