This Tibetan Yak Noodle Salad with Sesame Ginger Dressing is a refreshing and flavorful dish that combines tender yak meat with fresh vegetables and a zesty dressing.
Ingredients
- 1 lb yak meat, thinly sliced
- 8 oz rice noodles
- 1 cup shredded cabbage
- 1 carrot, julienned
- 1 bell pepper, thinly sliced
- 1/4 cup chopped cilantro
- 2 green onions, sliced
- 1/4 cup sesame seeds
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp sesame oil
- 1 tbsp fresh ginger, grated
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Bring a pot of water to a boil and cook the rice noodles according to the package instructions. Drain and set aside.
- In a large bowl, combine the cooked yak meat, cooked rice noodles, shredded cabbage, julienned carrot, sliced bell pepper, chopped cilantro, and sliced green onions.
- In a small skillet, toast the sesame seeds over medium heat until golden brown, then set aside.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, and salt and pepper to taste to make the dressing.
- Pour the dressing over the noodle salad and toss to coat evenly.
- Sprinkle the toasted sesame seeds over the salad before serving.
