Tibetan Yak Noodle Salad With Sesame Ginger Dressing

Ingredients

  • 1 lb yak meat, thinly sliced
  • 8 oz rice noodles
  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • 1 bell pepper, thinly sliced
  • 1/4 cup chopped cilantro
  • 2 green onions, sliced
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 1 tbsp fresh ginger, grated
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Bring a pot of water to a boil and cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a large bowl, combine the cooked yak meat, cooked rice noodles, shredded cabbage, julienned carrot, sliced bell pepper, chopped cilantro, and sliced green onions.
  3. In a small skillet, toast the sesame seeds over medium heat until golden brown, then set aside.
  4. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, and salt and pepper to taste to make the dressing.
  5. Pour the dressing over the noodle salad and toss to coat evenly.
  6. Sprinkle the toasted sesame seeds over the salad before serving.
