Tibetan Yak Noodle Stir-fry With Cashews

Ingredients

  • 1 lb yak meat, thinly sliced
  • 8 oz rice noodles
  • 1 cup cashews
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 bell pepper, julienned
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Soak the rice noodles in hot water for 10 minutes, then drain and set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the yak meat and stir-fry until browned. Remove from the skillet and set aside.
  3. Heat the remaining tablespoon of vegetable oil in the same skillet. Add the garlic, onion, and bell pepper, and stir-fry until the vegetables are tender-crisp.
  4. Return the yak meat to the skillet. Add the soaked rice noodles, cashews, soy sauce, oyster sauce, brown sugar, and red pepper flakes. Stir-fry until everything is well combined and heated through.
  5. Season with salt and pepper to taste. Serve hot and enjoy!
