Ingredients
- 1 lb yak meat, thinly sliced
- 8 oz Tibetan noodles
- 1 cup mixed vegetables (bell peppers, carrots, snow peas)
- 3 cloves garlic, minced
- 1/2 cup peanuts, chopped
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 2 tbsp peanut butter
- 1 tbsp honey
- 1 tsp sesame oil
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
Instructions
- Boil the Tibetan noodles according to package instructions. Drain and set aside.
- In a small bowl, whisk together soy sauce, rice vinegar, peanut butter, honey, sesame oil, and red pepper flakes to make the spicy peanut sauce. Set aside.
- Heat a large skillet over medium-high heat. Add the yak meat and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the mixed vegetables and minced garlic. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the cooked yak meat to the skillet. Add the boiled Tibetan noodles and the prepared spicy peanut sauce. Toss everything together until well combined and heated through.
- Season with salt and pepper to taste. Serve the Tibetan Yak Noodle Stir-Fry with a sprinkle of chopped peanuts on top.
