Tibetan Yak Noodle Stir-fry With Spicy Peanut Sauce

Ingredients

  • 1 lb yak meat, thinly sliced
  • 8 oz Tibetan noodles
  • 1 cup mixed vegetables (bell peppers, carrots, snow peas)
  • 3 cloves garlic, minced
  • 1/2 cup peanuts, chopped
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp peanut butter
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Boil the Tibetan noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce, rice vinegar, peanut butter, honey, sesame oil, and red pepper flakes to make the spicy peanut sauce. Set aside.
  3. Heat a large skillet over medium-high heat. Add the yak meat and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add the mixed vegetables and minced garlic. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Return the cooked yak meat to the skillet. Add the boiled Tibetan noodles and the prepared spicy peanut sauce. Toss everything together until well combined and heated through.
  6. Season with salt and pepper to taste. Serve the Tibetan Yak Noodle Stir-Fry with a sprinkle of chopped peanuts on top.
