Tibs (ethiopian Spiced Beef Stir-fry)

Ingredients

  • 1 lb beef, thinly sliced
  • 2 onions, sliced
  • 3 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, sliced
  • 2 tbsp olive oil
  • 1 tsp berbere spice mix
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup water

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the onions, garlic, ginger, and green chilies. Sauté until the onions are soft and translucent.
  3. Add the beef slices to the pan and cook until browned.
  4. Stir in the berbere spice mix, cumin, paprika, salt, and black pepper. Cook for 2-3 minutes to allow the spices to bloom.
  5. Add the chopped tomatoes and water. Cover and simmer for 10 minutes, stirring occasionally.
  6. Uncover the pan and continue to cook until the sauce thickens and the beef is tender.
  7. Adjust seasoning if needed and serve hot.
