Tibs Fajitas (ethiopian Injera Tacos)
Tibs Fajitas, also known as Ethiopian Injera Tacos, are a delicious fusion of Ethiopian and Mexican cuisines. This recipe combines the bold flavors of Ethiopian tibs with the concept of fajitas, all wrapped up in soft injera bread. Ingredients
- 1 lb beef, thinly sliced
- 2 onions, sliced
- 3 bell peppers, sliced
- 4 tomatoes, diced
- 4 cloves garlic, minced
- 1 tsp ginger, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 4 pieces of injera bread
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the sliced onions and cook until softened, about 5 minutes.
- Add the beef, garlic, ginger, paprika, cayenne pepper, salt, and pepper. Cook until the beef is browned, about 8-10 minutes.
- Push the beef and onion mixture to one side of the skillet and add the sliced bell peppers to the other side. Cook for 5 minutes.
- Add the diced tomatoes to the skillet and cook for an additional 5 minutes, until the tomatoes are softened.
- Warm the injera bread in a separate skillet or in the microwave.
- To assemble the tibs fajitas, place a spoonful of the beef and vegetable mixture onto each piece of injera. Roll up the injera and filling like a taco.
