Tibs Fajitas (ethiopian Injera Tacos)

Ingredients

  • 1 lb beef, thinly sliced
  • 2 onions, sliced
  • 3 bell peppers, sliced
  • 4 tomatoes, diced
  • 4 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 4 pieces of injera bread

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sliced onions and cook until softened, about 5 minutes.
  3. Add the beef, garlic, ginger, paprika, cayenne pepper, salt, and pepper. Cook until the beef is browned, about 8-10 minutes.
  4. Push the beef and onion mixture to one side of the skillet and add the sliced bell peppers to the other side. Cook for 5 minutes.
  5. Add the diced tomatoes to the skillet and cook for an additional 5 minutes, until the tomatoes are softened.
  6. Warm the injera bread in a separate skillet or in the microwave.
  7. To assemble the tibs fajitas, place a spoonful of the beef and vegetable mixture onto each piece of injera. Roll up the injera and filling like a taco.
