Ingredients

  • 1 1/2 cups Arborio rice
  • 2 lbs mussels, cleaned and debearded
  • 4 large potatoes, thinly sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1/4 cup extra virgin olive oil
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  3. Add the mussels to the skillet and pour in the white wine. Cover and cook until the mussels have opened, about 5 minutes. Discard any unopened mussels.
  4. Remove the mussels from their shells and set aside, reserving the cooking liquid.
  5. In a large baking dish, layer half of the sliced potatoes on the bottom.
  6. Spread half of the rice over the potatoes, then arrange half of the mussels on top.
  7. Repeat the layers with the remaining potatoes, rice, and mussels.
  8. Pour the reserved cooking liquid over the layers, then sprinkle with chopped parsley, salt, and pepper.
  9. Cover the baking dish with foil and bake for 45 minutes.
  10. Remove the foil and bake for an additional 15 minutes, or until the top is golden and the rice is tender.
  11. Let the casserole rest for 10 minutes before serving.
