This Rice, Potato, and Mussel Casserole, also known as Tiella di Riso, Patate e Cozze, is a traditional dish from the Puglia region of Italy. It's a hearty and flavorful casserole that combines the earthy flavors of potatoes with the briny taste of mussels, all layered with tender rice.
Ingredients
- 1 1/2 cups Arborio rice
- 2 lbs mussels, cleaned and debearded
- 4 large potatoes, thinly sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup white wine
- 1/4 cup extra virgin olive oil
- 1/4 cup chopped parsley
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the mussels to the skillet and pour in the white wine. Cover and cook until the mussels have opened, about 5 minutes. Discard any unopened mussels.
- Remove the mussels from their shells and set aside, reserving the cooking liquid.
- In a large baking dish, layer half of the sliced potatoes on the bottom.
- Spread half of the rice over the potatoes, then arrange half of the mussels on top.
- Repeat the layers with the remaining potatoes, rice, and mussels.
- Pour the reserved cooking liquid over the layers, then sprinkle with chopped parsley, salt, and pepper.
- Cover the baking dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the top is golden and the rice is tender.
- Let the casserole rest for 10 minutes before serving.
