  • 1 tablespoon fish sauce
  • 1 tablespoon palm sugar (or brown sugar)
  • 1 kaffir lime leaf, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup (200g) green beans, trimmed and halved
  • 1 cup (200g) sliced mushrooms
  • 2 cups (400g) cooked jasmine rice
  • Fresh cilantro leaves, for garnish

Instructions

  1. In a large pan, heat the coconut milk over medium heat. Add the red curry paste, fish sauce, palm sugar, and kaffir lime leaf. Stir to combine.
  2. Add the fish fillets to the pan and simmer for 5 minutes, until the fish is cooked through.
  3. Add the red bell pepper, green beans, and mushrooms to the pan. Simmer for an additional 5-7 minutes, until the vegetables are tender.
  4. Divide the cooked jasmine rice among 4 bowls. Spoon the fish and vegetable mixture over the rice.
  5. Garnish with fresh cilantro leaves and serve hot.
