- 1 kaffir lime leaf, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 cup (200g) green beans, trimmed and halved
- 1 cup (200g) sliced mushrooms
- 2 cups (400g) cooked jasmine rice
- Fresh cilantro leaves, for garnish
Instructions
- In a large pan, heat the coconut milk over medium heat. Add the red curry paste, fish sauce, palm sugar, and kaffir lime leaf. Stir to combine.
- Add the fish fillets to the pan and simmer for 5 minutes, until the fish is cooked through.
- Add the red bell pepper, green beans, and mushrooms to the pan. Simmer for an additional 5-7 minutes, until the vegetables are tender.
- Divide the cooked jasmine rice among 4 bowls. Spoon the fish and vegetable mixture over the rice.
- Garnish with fresh cilantro leaves and serve hot.
