Ingredients
- 1 lb boneless chicken thighs, cut into small pieces
- 1 tbsp soy sauce

- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 8 small flour tortillas
- 1 cup diced pineapple
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 jalapeno, seeded and diced
- 2 tbsp lime juice
- Salt and pepper to taste
Instructions
- In a bowl, combine the chicken pieces, soy sauce, ginger, garlic powder, onion powder, paprika, and cayenne pepper. Let it marinate for 10 minutes.
- Heat a skillet over medium heat and cook the marinated chicken until fully cooked, about 8-10 minutes.
- Warm the tortillas in a separate skillet or in the microwave.
- In a bowl, mix the diced pineapple, red onion, cilantro, jalapeno, and lime juice to make the salsa. Season with salt and pepper.
- Assemble the tacos by filling each tortilla with the cooked chicken and topping it with the pineapple salsa.
