Tiki Tacos With Pineapple Salsa

Ingredients

  • 1 lb boneless chicken thighs, cut into small pieces
  • 1 tbsp soy sauce
  • 1 tsp ground ginger
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 8 small flour tortillas
  • 1 cup diced pineapple
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeno, seeded and diced
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the chicken pieces, soy sauce, ginger, garlic powder, onion powder, paprika, and cayenne pepper. Let it marinate for 10 minutes.
  2. Heat a skillet over medium heat and cook the marinated chicken until fully cooked, about 8-10 minutes.
  3. Warm the tortillas in a separate skillet or in the microwave.
  4. In a bowl, mix the diced pineapple, red onion, cilantro, jalapeno, and lime juice to make the salsa. Season with salt and pepper.
