Ingredients
- 1 head of cauliflower, cut into florets
- 1 can of chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 2 tomatoes, diced
- 1 tablespoon tomato paste
- 2 teaspoons berbere spice mix
- 1 teaspoon turmeric
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 cups vegetable broth
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and ginger, and sauté until the onion is soft and translucent.
- Stir in the berbere spice mix, turmeric, cumin, and paprika, and cook for 1-2 minutes until fragrant.
- Add the tomatoes, tomato paste, cauliflower, and chickpeas to the pot. Season with salt and pepper, and stir to combine.
- Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the cauliflower is tender.
- Once the curry is ready, adjust the seasoning if needed, and serve it hot, garnished with fresh cilantro.
