Tikvesh Vineyard Lamb (Тиквешко јагниње)

Ingredients

  • 1.5 kg lamb shoulder, cut into chunks
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 cup red wine
  • 2 cups beef broth
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Season the lamb chunks with salt, pepper, and paprika.
  2. Heat the olive oil in a large pot over medium heat. Add the lamb chunks and brown on all sides. Remove the lamb from the pot and set aside.
  3. In the same pot, sauté the onions and garlic until softened.
  4. Add the diced tomatoes, red wine, beef broth, and dried oregano to the pot. Bring to a simmer.
  5. Return the lamb to the pot and cover. Let it simmer for 2 hours, or until the lamb is tender.
  6. Adjust the seasoning with salt and pepper if needed.
  7. Serve the Tikvesh Vineyard Lamb hot, accompanied by your favorite side dish.
