Timatim Fitfit (ethiopian Spiced Rice Pilaf)
Timatim Fitfit is a traditional Ethiopian dish made with spiced rice pilaf. It's a flavorful and aromatic dish that is perfect for a special occasion or a comforting meal at home.
Ingredients
- 2 cups long-grain white rice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cinnamon
- Salt to taste
- 3 cups vegetable broth
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- Juice of 1 lemon
- 1/4 cup olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, turmeric, cumin, paprika, and cinnamon to the pot. Stir and cook for 1-2 minutes until fragrant.
- Add the rice to the pot and stir to coat it with the spiced onion mixture.
- Pour in the vegetable broth and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Once the rice is cooked, fluff it with a fork and stir in the chopped parsley, cilantro, and lemon juice.
- Adjust the seasoning if needed and serve the Timatim Fitfit hot.
