Timatim Fitfit (ethiopian Spiced Rice Pilaf)

Ingredients

  • 2 cups long-grain white rice
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cinnamon
  • Salt to taste
  • 3 cups vegetable broth
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lemon
  • 1/4 cup olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic, turmeric, cumin, paprika, and cinnamon to the pot. Stir and cook for 1-2 minutes until fragrant.
  3. Add the rice to the pot and stir to coat it with the spiced onion mixture.
  4. Pour in the vegetable broth and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Once the rice is cooked, fluff it with a fork and stir in the chopped parsley, cilantro, and lemon juice.
  6. Adjust the seasoning if needed and serve the Timatim Fitfit hot.
