Ingredients

  • 12 crepes (scrippelle)
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup grated Pecorino cheese
  • 1 cup grated Parmigiano-Reggiano cheese
  • 6 eggs
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the ground beef to the skillet and cook until browned. Season with salt and pepper.
  3. Pour in the tomato sauce and simmer for 10 minutes. Remove from heat and set aside.
  4. Preheat the oven to 375°F (190°C).
  5. In a bowl, beat the eggs and mix in the grated Pecorino and Parmigiano-Reggiano cheeses.
  6. Grease a round baking dish and start assembling the timballo. Begin with a layer of crepes, then spread a portion of the meat sauce on top. Follow with a layer of the egg and cheese mixture. Repeat the layers until all ingredients are used, finishing with a layer of crepes on top.
  7. Bake the timballo in the preheated oven for 30-35 minutes, or until the top is golden and the pie is set.
  8. Remove from the oven and let it cool for a few minutes before slicing and serving.
