Timman (fragrant Rice Pilaf)
Timman, also known as Fragrant Rice Pilaf, is a traditional dish from Assyrian cuisine that is bursting with aromatic flavors and is perfect for any occasion.
Ingredients
- 2 cups basmati rice
- 3 tablespoons olive oil
- 1 onion, finely chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cardamom
- 1/4 cup slivered almonds
- 1/4 cup golden raisins
- 3 1/2 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the basmati rice to the pot and stir to coat the rice with the oil and onions.
- Add the cumin, cinnamon, allspice, and cardamom to the pot, and stir to toast the spices for 1-2 minutes.
- Stir in the slivered almonds and golden raisins, then pour in the vegetable broth. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice pilaf with a fork, then transfer to a serving dish and garnish with additional almonds and raisins if desired.
