Timman (fragrant Rice Pilaf)

Ingredients

  • 2 cups basmati rice
  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cardamom
  • 1/4 cup slivered almonds
  • 1/4 cup golden raisins
  • 3 1/2 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the basmati rice to the pot and stir to coat the rice with the oil and onions.
  3. Add the cumin, cinnamon, allspice, and cardamom to the pot, and stir to toast the spices for 1-2 minutes.
  4. Stir in the slivered almonds and golden raisins, then pour in the vegetable broth. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Fluff the rice pilaf with a fork, then transfer to a serving dish and garnish with additional almonds and raisins if desired.
