Timman Maqluba (iraqi Style Biryani)
Timman Maqluba, also known as Iraqi Style Biryani, is a delicious and aromatic rice dish that is popular in Iraqi cuisine. This flavorful one-pot meal is perfect for special occasions or family gatherings.
Ingredients
- 2 cups basmati rice, rinsed and soaked for 30 minutes
- 1 lb boneless chicken, cut into pieces
- 2 large onions, sliced
- 3 tomatoes, diced
- 1 eggplant, sliced
- 1 cup cauliflower florets
- 1/2 cup peas
- 1/4 cup chopped parsley
- 1/4 cup chopped cilantro
- 4 cups chicken or vegetable broth
- 1/2 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- Salt and pepper to taste
- 1/4 cup olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until golden brown. Remove half of the onions and set aside for later.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the turmeric, cumin, cinnamon, cardamom, and cloves. Add the tomatoes, parsley, and cilantro. Cook for 5 minutes.
- Arrange the eggplant slices on top of the chicken mixture, followed by the cauliflower florets and peas. Season with salt and pepper.
- Drain the soaked rice and spread it evenly over the vegetables. Pour the chicken or vegetable broth over the rice.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove the pot from the heat and let it rest for 10 minutes. Carefully invert the pot onto a large serving platter, allowing the rice to form a dome shape.
- Garnish with the reserved caramelized onions and serve hot.
