Timman Maqluba (iraqi Style Biryani)

Ingredients

  • 2 cups basmati rice, rinsed and soaked for 30 minutes
  • 1 lb boneless chicken, cut into pieces
  • 2 large onions, sliced
  • 3 tomatoes, diced
  • 1 eggplant, sliced
  • 1 cup cauliflower florets
  • 1/2 cup peas
  • 1/4 cup chopped parsley
  • 1/4 cup chopped cilantro
  • 4 cups chicken or vegetable broth
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • Salt and pepper to taste
  • 1/4 cup olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until golden brown. Remove half of the onions and set aside for later.
  2. Add the chicken pieces to the pot and cook until browned on all sides.
  3. Stir in the turmeric, cumin, cinnamon, cardamom, and cloves. Add the tomatoes, parsley, and cilantro. Cook for 5 minutes.
  4. Arrange the eggplant slices on top of the chicken mixture, followed by the cauliflower florets and peas. Season with salt and pepper.
  5. Drain the soaked rice and spread it evenly over the vegetables. Pour the chicken or vegetable broth over the rice.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove the pot from the heat and let it rest for 10 minutes. Carefully invert the pot onto a large serving platter, allowing the rice to form a dome shape.
  8. Garnish with the reserved caramelized onions and serve hot.
