Timman Qeema (iraqi Style Lamb Biryani)

Ingredients

  • 1 lb lamb, minced
  • 2 cups basmati rice
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon cinnamon powder
  • 4 cups chicken or lamb broth
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • Salt to taste
  • Vegetable oil

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until golden brown.
  3. Add the minced garlic and grated ginger, and cook for 1 minute.
  4. Add the minced lamb and cook until browned, breaking up any lumps with a spoon.
  5. Stir in the cumin, coriander, turmeric, red chili, and cinnamon powders, and salt to taste. Cook for 2 minutes.
  6. Add the basmati rice and stir to coat with the spices and lamb mixture.
  7. Pour in the chicken or lamb broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Fluff the rice with a fork and stir in the chopped cilantro and mint.
  9. Remove from heat and let it rest for 5 minutes before serving.
