Ingredients

  • 1 lb ground beef
  • 1 can (14 oz) coconut milk
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup shredded cheese
  • 1 bag of tortilla chips
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground beef over medium heat.
  2. Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
  3. Pour in the coconut milk and add the diced bell pepper. Simmer for 10 minutes, stirring occasionally.
  4. Season with salt and pepper to taste.
  5. Preheat the oven to 350°F (175°C).
  6. Spread the tortilla chips on a baking sheet and sprinkle the cooked meat mixture over the chips.
  7. Top with shredded cheese and bake for 5-7 minutes, or until the cheese is melted and bubbly.
