Tinaktak Quesadillas

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 can (14 oz) coconut milk
  • 1 cup green beans, sliced
  • 1 cup spinach, chopped
  • 8 flour tortillas
  • 2 cups shredded cheese
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground beef over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add the green beans and spinach, and cook until the vegetables are tender.
  5. Season with salt and pepper to taste.
  6. Place a tortilla in a separate skillet over medium heat.
  7. Sprinkle a layer of cheese on one half of the tortilla.
  8. Spoon the Tinaktak mixture over the cheese.
  9. Fold the tortilla in half and cook until the cheese is melted and the tortilla is golden brown.
  10. Repeat with the remaining tortillas and Tinaktak mixture.
  11. Serve the Tinaktak quesadillas hot and enjoy!
