Tinala Katne Fried Rice

Ingredients
- 2 cups cooked rice
- 1 cup tinala katne, thinly sliced
- 1/2 cup onion, diced
- 1/2 cup bell pepper, diced
- 2 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pan or wok over medium heat.
- Add tinala katne and cook until slightly crispy, then remove from the pan and set aside.
- In the same pan, sauté onion, bell pepper, and garlic until softened.
- Push the vegetables to one side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
- Add cooked rice to the pan and stir to combine with the vegetables and eggs.
- Drizzle soy sauce over the rice and mix well. Cook for a few more minutes to heat through.
- Finally, add the cooked tinala katne back to the pan and toss to combine with the rice. Season with salt and pepper to taste.
- Remove from heat and serve hot.
