Tinala Katne Fried Rice

Ingredients

  • 2 cups cooked rice
  • 1 cup tinala katne, thinly sliced
  • 1/2 cup onion, diced
  • 1/2 cup bell pepper, diced
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pan or wok over medium heat.
  2. Add tinala katne and cook until slightly crispy, then remove from the pan and set aside.
  3. In the same pan, sauté onion, bell pepper, and garlic until softened.
  4. Push the vegetables to one side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
  5. Add cooked rice to the pan and stir to combine with the vegetables and eggs.
  6. Drizzle soy sauce over the rice and mix well. Cook for a few more minutes to heat through.
  7. Finally, add the cooked tinala katne back to the pan and toss to combine with the rice. Season with salt and pepper to taste.
  8. Remove from heat and serve hot.
