Tintagel Tiramisu
Tintagel Tiramisu is a delightful dessert that combines the flavors of traditional Italian tiramisu with a Cornish twist. This recipe infuses the creamy richness of mascarpone cheese with the unique taste of Cornish clotted cream, resulting in a decadent and indulgent treat.
Ingredients
- 250g mascarpone cheese
- 150g Cornish clotted cream
- 100g caster sugar
- 2 tsp vanilla extract
- 200ml strong brewed coffee, cooled
- 100ml rum (optional)
- 24 ladyfinger biscuits
- 2 tbsp cocoa powder
Instructions
- In a mixing bowl, combine the mascarpone cheese, Cornish clotted cream, caster sugar, and vanilla extract. Mix until smooth and well combined.
- In a shallow dish, combine the cooled coffee and rum (if using). Dip each ladyfinger biscuit into the coffee mixture, ensuring they are soaked but not soggy.
- Arrange a layer of soaked ladyfinger biscuits in the bottom of a serving dish.
- Spread half of the mascarpone and clotted cream mixture over the soaked biscuits.
- Repeat the layers with the remaining soaked biscuits and mascarpone mixture.
- Cover and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld.
- Before serving, dust the top with cocoa powder.
