Tintagel Tiramisu is a delightful dessert that combines the flavors of traditional Italian tiramisu with a Cornish twist. This recipe infuses the creamy richness of mascarpone cheese with the unique taste of Cornish clotted cream, resulting in a decadent and indulgent treat.

Tintagel Tiramisu

Ingredients

  • 250g mascarpone cheese
  • 150g Cornish clotted cream
  • 100g caster sugar
  • 2 tsp vanilla extract
  • 200ml strong brewed coffee, cooled
  • 100ml rum (optional)
  • 24 ladyfinger biscuits
  • 2 tbsp cocoa powder

Instructions

  1. In a mixing bowl, combine the mascarpone cheese, Cornish clotted cream, caster sugar, and vanilla extract. Mix until smooth and well combined.
  2. In a shallow dish, combine the cooled coffee and rum (if using). Dip each ladyfinger biscuit into the coffee mixture, ensuring they are soaked but not soggy.
  3. Arrange a layer of soaked ladyfinger biscuits in the bottom of a serving dish.
  4. Spread half of the mascarpone and clotted cream mixture over the soaked biscuits.
  5. Repeat the layers with the remaining soaked biscuits and mascarpone mixture.
  6. Cover and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld.
  7. Before serving, dust the top with cocoa powder.
