Tinutuan, also known as Manado porridge, is a spicy and tangy green papaya soup that originates from the North Sulawesi province of Indonesia. This hearty and flavorful dish is a staple in Manado cuisine and is often enjoyed for breakfast or as a comforting meal.
Ingredients
- 2 cups green papaya, julienned
- 1 cup corn kernels
- 1 cup spinach, chopped
- 1 tomato, diced
- 1 lemongrass stalk, bruised
- 3 red chilies, sliced
- 4 cups vegetable broth
- 1 tsp salt
- 1/2 tsp ground white pepper
- 2 tbsp lime juice
Instructions
- In a large pot, bring the vegetable broth to a boil.
- Add the lemongrass, red chilies, and salt. Simmer for 10 minutes.
- Add the green papaya, corn, and tomato. Cook for another 10 minutes.
- Stir in the spinach and lime juice. Cook for an additional 5 minutes.
- Season with ground white pepper and adjust the salt to taste.
- Remove the lemongrass stalk before serving.
