Ingredients

  • 2 cups green papaya, julienned
  • 1 cup corn kernels
  • 1 cup spinach, chopped
  • 1 tomato, diced
  • 1 lemongrass stalk, bruised
  • 3 red chilies, sliced
  • 4 cups vegetable broth
  • 1 tsp salt
  • 1/2 tsp ground white pepper
  • 2 tbsp lime juice

Instructions

  1. In a large pot, bring the vegetable broth to a boil.
  2. Add the lemongrass, red chilies, and salt. Simmer for 10 minutes.
  3. Add the green papaya, corn, and tomato. Cook for another 10 minutes.
  4. Stir in the spinach and lime juice. Cook for an additional 5 minutes.
  5. Season with ground white pepper and adjust the salt to taste.
  6. Remove the lemongrass stalk before serving.
