Tiramisu Delle Tre Torri (three Towers Tiramisu)
Tiramisu delle Tre Torri, or Three Towers Tiramisu, is a classic dessert from the small European country of San Marino. This delectable treat is named after the three iconic towers that overlook the capital city of San Marino. It's a creamy and indulgent dessert that is perfect for any special occasion.
Ingredients
- 6 egg yolks
- 3/4 cup granulated sugar
- 1 cup mascarpone cheese
- 1 1/2 cups heavy cream
- 1 1/2 cups strong brewed coffee, cooled
- 3 tablespoons rum
- 24 ladyfinger cookies
- Unsweetened cocoa powder, for dusting
Instructions
- In a heatproof bowl, whisk together the egg yolks and sugar. Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water. Whisk constantly until the mixture thickens and doubles in volume. Remove from heat and let it cool.
- Once the egg mixture has cooled, add the mascarpone cheese and mix until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.
- In a shallow dish, combine the brewed coffee and rum. Dip each ladyfinger into the coffee mixture for a few seconds, making sure not to soak them completely. Arrange a layer of soaked ladyfingers in the bottom of a 9x9 inch dish.
- Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, dust the top with unsweetened cocoa powder.
