Ingredients

  • 6 egg yolks
  • 3/4 cup granulated sugar
  • 1 cup mascarpone cheese
  • 1 1/2 cups heavy cream
  • 1/2 cup amaretto liqueur
  • 1 cup strong brewed coffee, cooled
  • 24 ladyfinger cookies
  • 1 tablespoon unsweetened cocoa powder

Instructions

  1. In a heatproof bowl, whisk together the egg yolks and sugar. Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn't touch the water. Whisk constantly until the mixture thickens.
  2. Remove the bowl from the heat and whisk in the mascarpone cheese until smooth.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture.
  4. In a shallow dish, combine the amaretto and coffee. Quickly dip each ladyfinger into the mixture and arrange them in the bottom of a 9x9 inch serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  6. Cover and refrigerate for at least 4 hours, or overnight.
  7. Before serving, dust the top with cocoa powder.
