Ingredients
- 1.5 lbs beef stew meat, cubed
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 red bell pepper, chopped
- 2 tomatoes, diced
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat some oil in a large pot over medium heat. Add the beef and brown on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the onions and garlic. Cook until softened.
- Add the carrots, potatoes, and bell pepper. Cook for a few minutes.
- Stir in the tomatoes, beef broth, tomato paste, paprika, thyme, salt, and pepper.
- Return the beef to the pot and bring the stew to a simmer. Cover and cook for 1.5 to 2 hours, or until the beef is tender.
- Adjust the seasoning if needed and serve hot.
