Tofu Padang Curry

Ingredients
- 1 block of firm tofu, cubed
- 2 tablespoons of vegetable oil
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 2 tablespoons of Padang curry paste
- 1 can of coconut milk
- 1 cup of vegetable broth
- 2 tablespoons of soy sauce
- 1 tablespoon of brown sugar
- 1 teaspoon of turmeric
- Salt to taste
- Chopped cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Stir in the Padang curry paste and cook for 2 minutes.
- Add the cubed tofu and cook for 5 minutes, stirring gently to coat the tofu with the curry paste.
- Pour in the coconut milk and vegetable broth. Stir in the soy sauce, brown sugar, turmeric, and salt.
- Simmer for 15-20 minutes, until the tofu is tender and the flavors have melded together.
- Garnish with chopped cilantro and serve hot with steamed rice or naan bread.
