Tofu Padang Curry

Ingredients

  • 1 block of firm tofu, cubed
  • 2 tablespoons of vegetable oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 2 tablespoons of Padang curry paste
  • 1 can of coconut milk
  • 1 cup of vegetable broth
  • 2 tablespoons of soy sauce
  • 1 tablespoon of brown sugar
  • 1 teaspoon of turmeric
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  3. Stir in the Padang curry paste and cook for 2 minutes.
  4. Add the cubed tofu and cook for 5 minutes, stirring gently to coat the tofu with the curry paste.
  5. Pour in the coconut milk and vegetable broth. Stir in the soy sauce, brown sugar, turmeric, and salt.
  6. Simmer for 15-20 minutes, until the tofu is tender and the flavors have melded together.
  7. Garnish with chopped cilantro and serve hot with steamed rice or naan bread.
