Tofu Rafute (豆腐ラフテー)

Ingredients

  • 1 block of firm tofu
  • 1 cup soy sauce
  • 1 cup sake
  • 1 cup mirin
  • 1/2 cup sugar
  • 2 cloves garlic, minced
  • 1 inch ginger, sliced

Instructions

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. In a pot, combine soy sauce, sake, mirin, sugar, garlic, and ginger. Bring to a simmer.
  3. Add the tofu cubes to the pot and simmer for 30 minutes, turning the tofu occasionally.
  4. Remove the pot from the heat and let the tofu marinate in the sauce for another 30 minutes.
  5. Serve the tofu rafute hot, with a drizzle of the braising liquid.
