豆腐ラフテー (Tofu Rafute) is a traditional Okinawan dish that features tender and flavorful braised tofu. This dish is a delicious representation of Okinawan cuisine, known for its unique blend of flavors and influences from various cultures.
Ingredients
- 1 block of firm tofu
- 1 cup soy sauce
- 1 cup sake
- 1 cup mirin
- 1/2 cup sugar
- 2 cloves garlic, minced
- 1 inch ginger, sliced
Instructions
- Press the tofu to remove excess water, then cut it into cubes.
- In a pot, combine soy sauce, sake, mirin, sugar, garlic, and ginger. Bring to a simmer.
- Add the tofu cubes to the pot and simmer for 30 minutes, turning the tofu occasionally.
- Remove the pot from the heat and let the tofu marinate in the sauce for another 30 minutes.
- Serve the tofu rafute hot, with a drizzle of the braising liquid.
