Tofu Rafute Donburi (豆腐ラフテー丼)
This traditional Okinawan dish combines the flavors of tender tofu and savory rafute pork, served over a bed of steamed rice. It's a comforting and satisfying meal that's perfect for any occasion.
Ingredients
- 1 block firm tofu, drained and cubed
- 1 cup rafute pork, sliced
- 1/2 cup soy sauce
- 1/4 cup mirin
- 1/4 cup sake
- 2 tbsp sugar
- 4 cups steamed rice
Instructions
- In a large pot, combine the soy sauce, mirin, sake, and sugar. Bring to a simmer over medium heat.
- Add the rafute pork slices to the pot and simmer for 1.5 hours, until the pork is tender and the sauce has thickened.
- While the pork is simmering, steam the tofu cubes for 10 minutes until heated through.
- To assemble the donburi, place a serving of steamed rice in each bowl, top with the steamed tofu, and then spoon the rafute pork and sauce over the tofu and rice.
