Tofu Rafute Donburi (豆腐ラフテー丼)

This traditional Okinawan dish combines the flavors of tender tofu and savory rafute pork, served over a bed of steamed rice. It's a comforting and satisfying meal that's perfect for any occasion.

Tofu Rafute Donburi (豆腐ラフテー丼)

Ingredients

  • 1 block firm tofu, drained and cubed
  • 1 cup rafute pork, sliced
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup sake
  • 2 tbsp sugar
  • 4 cups steamed rice

Instructions

  1. In a large pot, combine the soy sauce, mirin, sake, and sugar. Bring to a simmer over medium heat.
  2. Add the rafute pork slices to the pot and simmer for 1.5 hours, until the pork is tender and the sauce has thickened.
  3. While the pork is simmering, steam the tofu cubes for 10 minutes until heated through.
  4. To assemble the donburi, place a serving of steamed rice in each bowl, top with the steamed tofu, and then spoon the rafute pork and sauce over the tofu and rice.
