Tofu Rafute Lettuce Wraps are a delicious and healthy dish from Okinawan cuisine. This recipe combines the flavors of tender tofu and savory rafute, wrapped in crisp lettuce leaves for a refreshing and satisfying meal.
Ingredients
- 1 block of firm tofu, drained and cubed
- 1 cup of rafute (Okinawan braised pork belly), diced
- 8 large lettuce leaves
- 1/4 cup soy sauce
- 2 tablespoons mirin
- 2 tablespoons sake
- 2 tablespoons sugar
- 1 teaspoon grated ginger
- 1 teaspoon sesame oil
- 1/4 cup chopped green onions
Instructions
- In a small bowl, mix together the soy sauce, mirin, sake, sugar, grated ginger, and sesame oil to make the marinade.
- Place the tofu and rafute in a shallow dish and pour the marinade over them. Let it marinate for 15 minutes.
- Heat a non-stick pan over medium heat and add the marinated tofu and rafute. Cook for 10-12 minutes, or until the sauce thickens and coats the ingredients.
- Remove from heat and stir in the chopped green onions.
- To assemble the lettuce wraps, place a spoonful of the tofu rafute mixture onto each lettuce leaf and wrap it up like a taco.
