Tofu Rafute Lettuce Wraps

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 1 cup of rafute (Okinawan braised pork belly), diced
  • 8 large lettuce leaves
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 2 tablespoons sake
  • 2 tablespoons sugar
  • 1 teaspoon grated ginger
  • 1 teaspoon sesame oil
  • 1/4 cup chopped green onions

Instructions

  1. In a small bowl, mix together the soy sauce, mirin, sake, sugar, grated ginger, and sesame oil to make the marinade.
  2. Place the tofu and rafute in a shallow dish and pour the marinade over them. Let it marinate for 15 minutes.
  3. Heat a non-stick pan over medium heat and add the marinated tofu and rafute. Cook for 10-12 minutes, or until the sauce thickens and coats the ingredients.
  4. Remove from heat and stir in the chopped green onions.
  5. To assemble the lettuce wraps, place a spoonful of the tofu rafute mixture onto each lettuce leaf and wrap it up like a taco.
