Tofu Roerbak (surinamese Tofu Stir-fry)

Ingredients

  • 1 block of firm tofu, cubed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1 carrot, julienned
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. In a small bowl, mix the soy sauce, sesame oil, rice vinegar, ginger, and cornstarch to make the sauce.
  3. Heat vegetable oil in a large pan or wok over medium-high heat.
  4. Add the tofu cubes and cook until golden brown on all sides. Remove from the pan and set aside.
  5. In the same pan, add the onion and garlic, and sauté until fragrant.
  6. Add the bell peppers, snap peas, and carrot, and stir-fry for a few minutes until the vegetables are tender-crisp.
  7. Return the tofu to the pan, pour the sauce over the stir-fry, and toss to coat everything evenly.
  8. Season with salt and pepper to taste.
  9. Serve the Tofu Roerbak hot with steamed rice or noodles.
