Ingredients
- 1 lb beef stew meat, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 2 cups beef broth
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp ground ginger
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the beef cubes and brown on all sides.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.

- Pour in the diced tomatoes and beef broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 45 minutes, or until the beef is tender.
- Add the black beans to the pot and simmer for an additional 10 minutes.
- Season with salt and pepper to taste.
