Togolese Spiced Beef and Yam Skewers (Brochettes de Bœuf et Ignames)

Ingredients

  • 1 lb beef, cut into chunks
  • 2 large yams, peeled and cut into chunks
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine the beef, onion, garlic, ginger, paprika, cayenne pepper, vegetable oil, salt, and pepper. Marinate for at least 1 hour.
  2. Thread the marinated beef and yam chunks onto the soaked wooden skewers.
  3. Preheat the grill to medium-high heat.
  4. Grill the skewers for about 10-12 minutes, turning occasionally, until the beef is cooked to your desired doneness and the yams are tender.
  5. Serve the brochettes hot and enjoy!
