Togolese Spiced Chicken and Vegetable Curry (Curry de Poulet et Légumes Épicés)

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 2 tomatoes, diced
  • 1 eggplant, cut into chunks
  • 2 carrots, sliced
  • 1 bell pepper, diced
  • 2 cups chicken broth
  • 1 cup coconut milk
  • 2 tablespoons tomato paste
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chicken thighs and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the chopped onion, garlic, and grated ginger. Sauté until the onion is soft and translucent.
  3. Add the diced tomatoes, eggplant, carrots, and bell pepper to the pot. Cook for a few minutes until the vegetables start to soften.
  4. Pour in the chicken broth and coconut milk. Stir in the tomato paste, curry powder, cumin, coriander, and cayenne pepper. Season with salt and pepper.
  5. Return the browned chicken thighs to the pot. Bring the curry to a simmer, then cover and cook for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Serve the Togolese Spiced Chicken and Vegetable Curry hot over steamed rice or with crusty bread.
