Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon grated ginger
- 2 tomatoes, diced
- 1 eggplant, cut into chunks
- 2 carrots, sliced
- 1 bell pepper, diced
- 2 cups chicken broth
- 1 cup coconut milk
- 2 tablespoons tomato paste
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chicken thighs and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion, garlic, and grated ginger. Sauté until the onion is soft and translucent.
- Add the diced tomatoes, eggplant, carrots, and bell pepper to the pot. Cook for a few minutes until the vegetables start to soften.
- Pour in the chicken broth and coconut milk. Stir in the tomato paste, curry powder, cumin, coriander, and cayenne pepper. Season with salt and pepper.
- Return the browned chicken thighs to the pot. Bring the curry to a simmer, then cover and cook for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
