Ingredients
- 1 1/2 lbs boneless lamb, cut into cubes

Instructions

- Add the diced tomatoes and cook for another 5 minutes, allowing the tomatoes to break down and create a thick sauce.
- Pour in the broth and add the diced potatoes. Season with salt and pepper, then bring the stew to a simmer.
- Cover the pot and let the stew simmer for 45-50 minutes, or until the lamb is tender and the potatoes are cooked through.
