Togolese Spiced Lamb and Rice Pilaf (Pilaf d'Agneau Épicé)

Ingredients
- 1 lb boneless lamb, cut into cubes
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tomatoes, diced
- 2 cups chicken or vegetable broth
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper
- 1/2 tsp turmeric
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and cook until softened.
- Add the lamb cubes to the pot and brown them on all sides.
- Stir in the ground cumin, coriander, cayenne pepper, turmeric, salt, and pepper, and cook for 2 minutes to toast the spices.
- Add the diced tomatoes and cook for another 5 minutes.
- Stir in the basmati rice and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the pilaf with a fork and serve hot.
