Togolese Spiced Lamb and Rice Pilaf (Pilaf d'Agneau Épicé)

Ingredients

  • 1 lb boneless lamb, cut into cubes
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tomatoes, diced
  • 2 cups chicken or vegetable broth
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and cook until softened.
  2. Add the lamb cubes to the pot and brown them on all sides.
  3. Stir in the ground cumin, coriander, cayenne pepper, turmeric, salt, and pepper, and cook for 2 minutes to toast the spices.
  4. Add the diced tomatoes and cook for another 5 minutes.
  5. Stir in the basmati rice and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  6. Fluff the pilaf with a fork and serve hot.
