Togolese Style Coconut Curry Tofu (Curry de Tofu à la Togolaise)

Ingredients

  • 1 block of firm tofu, cubed
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon Togolese curry powder
  • 1 can (400ml) coconut milk
  • 1 cup vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro, for garnish

Instructions

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. Heat the vegetable oil in a large pan over medium heat. Add the onion and garlic, and sauté until softened.
  3. Stir in the Togolese curry powder and cook for 1-2 minutes until fragrant.
