Ingredients

- 1 eggplant, diced

- 1 bell pepper, chopped
- 1 cup green beans, trimmed
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté for 2-3 minutes until fragrant.
