Togolese Style Grilled Fish (Poisson Grillé à la Togolaise)

Ingredients

  • 4 whole fish (such as tilapia or sea bream), cleaned and scaled
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 scotch bonnet pepper, finely chopped
  • 1/4 cup vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Score the fish on both sides with a sharp knife.
  2. In a bowl, mix together the onion, tomatoes, garlic, ginger, scotch bonnet pepper, vegetable oil, paprika, coriander, salt, and pepper to create the marinade.
  3. Rub the marinade all over the fish, making sure to get it into the scores.
  4. Cover the fish and let it marinate in the refrigerator for at least 1 hour.
  5. Preheat the grill to medium-high heat.
  6. Grill the fish for about 6-8 minutes on each side, or until the flesh is opaque and easily flakes with a fork.
  7. Transfer the grilled fish to a serving platter, garnish with fresh parsley, and serve hot.
