Ingredients
- 4 whole fish (such as tilapia or sea bream), cleaned and scaled
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 scotch bonnet pepper, finely chopped
- 1/4 cup vegetable oil
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Score the fish on both sides with a sharp knife.
- In a bowl, mix together the onion, tomatoes, garlic, ginger, scotch bonnet pepper, vegetable oil, paprika, coriander, salt, and pepper to create the marinade.
- Rub the marinade all over the fish, making sure to get it into the scores.
- Cover the fish and let it marinate in the refrigerator for at least 1 hour.
- Preheat the grill to medium-high heat.
- Grill the fish for about 6-8 minutes on each side, or until the flesh is opaque and easily flakes with a fork.
- Transfer the grilled fish to a serving platter, garnish with fresh parsley, and serve hot.
