Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 cup dried lentils, rinsed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 can (14 oz) coconut milk
- 2 cups vegetable broth
- 2 tablespoons tomato paste
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 2 tablespoons oil
Instructions
- In a large pot, heat the oil over medium heat. Add the onion, garlic, and ginger, and sauté until the onion is soft and translucent.
- Stir in the curry powder, cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the sweet potatoes, lentils, coconut milk, vegetable broth, and tomato paste. Season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 25-30 minutes, or until the sweet potatoes and lentils are tender.
