Togolese Sweet Potato and Lentil Curry (Curry de Patate Douce et Lentilles à la Togolaise)

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 cup dried lentils, rinsed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 cups vegetable broth
  • 2 tablespoons tomato paste
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 tablespoons oil

Instructions

  1. In a large pot, heat the oil over medium heat. Add the onion, garlic, and ginger, and sauté until the onion is soft and translucent.
