Ingredients
- 1 lb (450g) boneless, skinless chicken thighs
- 1/2 cup (120ml) soy sauce
- 1/4 cup (60ml) mirin
- 2 tbsp (30ml) sake
- 3 tbsp (45g) brown sugar
- 2 cloves garlic, minced
- 1 tsp (5g) grated ginger
- 2 cups (400g) cooked white rice
- 1 cup (150g) mixed vegetables (such as bell peppers, carrots, and snap peas)
Instructions
- In a bowl, whisk together soy sauce, mirin, sake, brown sugar, garlic, and ginger to make the teriyaki sauce.
- Cut the chicken thighs into bite-sized pieces and marinate them in half of the teriyaki sauce for 10 minutes.
- Heat a large skillet over medium heat and add the marinated chicken. Cook for 6-8 minutes, or until the chicken is cooked through.
- While the chicken is cooking, steam the mixed vegetables until tender-crisp.
- Once the chicken is cooked, pour the remaining teriyaki sauce into the skillet and stir to coat the chicken.
- Serve the teriyaki chicken over steamed rice, with the mixed vegetables on the side.
