Tokyo Teriyaki Temptation

Ingredients

  • 1 lb (450g) boneless, skinless chicken thighs
  • 1/2 cup (120ml) soy sauce
  • 1/4 cup (60ml) mirin
  • 2 tbsp (30ml) sake
  • 3 tbsp (45g) brown sugar
  • 2 cloves garlic, minced
  • 1 tsp (5g) grated ginger
  • 2 cups (400g) cooked white rice
  • 1 cup (150g) mixed vegetables (such as bell peppers, carrots, and snap peas)

Instructions

  1. In a bowl, whisk together soy sauce, mirin, sake, brown sugar, garlic, and ginger to make the teriyaki sauce.
  2. Cut the chicken thighs into bite-sized pieces and marinate them in half of the teriyaki sauce for 10 minutes.
  3. Heat a large skillet over medium heat and add the marinated chicken. Cook for 6-8 minutes, or until the chicken is cooked through.
  4. While the chicken is cooking, steam the mixed vegetables until tender-crisp.
  5. Once the chicken is cooked, pour the remaining teriyaki sauce into the skillet and stir to coat the chicken.
  6. Serve the teriyaki chicken over steamed rice, with the mixed vegetables on the side.
