Ingredients

  • 1 lb boneless, skinless chicken thighs, sliced
  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 2 stalks lemongrass, cut into 2-inch pieces and bruised
  • 6 kaffir lime leaves
  • 3-4 slices galangal or ginger
  • 8 oz mushrooms, sliced
  • 2-3 red chilies, sliced (adjust to taste)
  • 3 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp sugar
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a pot, bring the chicken broth to a boil.
  2. Add lemongrass, kaffir lime leaves, and galangal or ginger. Simmer for 5 minutes.
  3. Add chicken, mushrooms, and chilies. Cook until the chicken is no longer pink.
  4. Stir in coconut milk, fish sauce, lime juice, and sugar. Simmer for 5-7 minutes.
  5. Remove from heat and stir in cilantro.
  6. Serve hot and enjoy!
