Tom Kha Gai, also known as Thai Coconut Soup, is a popular and aromatic soup from Thailand. It is made with coconut milk, chicken, and a variety of herbs and spices, resulting in a rich and flavorful dish that is both comforting and satisfying.
Ingredients
- 1 lb boneless, skinless chicken thighs, sliced
- 4 cups chicken broth
- 1 can (14 oz) coconut milk
- 2 stalks lemongrass, cut into 2-inch pieces and bruised
- 6 kaffir lime leaves
- 3-4 slices galangal or ginger
- 8 oz mushrooms, sliced
- 2-3 red chilies, sliced (adjust to taste)
- 3 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp sugar
- 1/4 cup fresh cilantro, chopped
Instructions
- In a pot, bring the chicken broth to a boil.
- Add lemongrass, kaffir lime leaves, and galangal or ginger. Simmer for 5 minutes.
- Add chicken, mushrooms, and chilies. Cook until the chicken is no longer pink.
- Stir in coconut milk, fish sauce, lime juice, and sugar. Simmer for 5-7 minutes.
- Remove from heat and stir in cilantro.
- Serve hot and enjoy!
