Ingredients
- 4 cups of chicken or vegetable broth
- 1 stalk of lemongrass, cut into 2-inch pieces
- 3 kaffir lime leaves
- 3-4 Thai bird's eye chilies, smashed
- 3 cloves of garlic, smashed
- 1 inch of galangal, sliced
- 8-10 medium-sized shrimp, peeled and deveined
- 8-10 cherry tomatoes
- 1 small onion, sliced
- 2 tablespoons of fish sauce
- 2 tablespoons of lime juice
- 1 teaspoon of sugar
- 1/4 cup of fresh cilantro leaves
Instructions
- In a pot, bring the chicken or vegetable broth to a boil over medium heat.
- Add lemongrass, kaffir lime leaves, Thai bird's eye chilies, garlic, and galangal to the pot. Let it simmer for 5 minutes to infuse the flavors.
- Add the shrimp, cherry tomatoes, and onion to the pot. Cook until the shrimp turns pink and opaque, about 2-3 minutes.
- Stir in fish sauce, lime juice, and sugar. Taste and adjust the seasoning if needed.
- Remove the pot from heat and stir in fresh cilantro leaves.
- Serve the Tom Yum Goong hot in bowls, garnished with extra cilantro leaves if desired.
