Tom Yum Goong (spicy Tom Yum Soup)

Ingredients

  • 4 cups of chicken or vegetable broth
  • 1 stalk of lemongrass, cut into 2-inch pieces
  • 3 kaffir lime leaves
  • 3-4 Thai bird's eye chilies, smashed
  • 3 cloves of garlic, smashed
  • 1 inch of galangal, sliced
  • 8-10 medium-sized shrimp, peeled and deveined
  • 8-10 cherry tomatoes
  • 1 small onion, sliced
  • 2 tablespoons of fish sauce
  • 2 tablespoons of lime juice
  • 1 teaspoon of sugar
  • 1/4 cup of fresh cilantro leaves

Instructions

  1. In a pot, bring the chicken or vegetable broth to a boil over medium heat.
  2. Add lemongrass, kaffir lime leaves, Thai bird's eye chilies, garlic, and galangal to the pot. Let it simmer for 5 minutes to infuse the flavors.
  3. Add the shrimp, cherry tomatoes, and onion to the pot. Cook until the shrimp turns pink and opaque, about 2-3 minutes.
  4. Stir in fish sauce, lime juice, and sugar. Taste and adjust the seasoning if needed.
  5. Remove the pot from heat and stir in fresh cilantro leaves.
  6. Serve the Tom Yum Goong hot in bowls, garnished with extra cilantro leaves if desired.
