Ingredients
- 4 large tomatoes
- 1 pound ground beef
- 1 onion, finely chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1/2 cup cooked rice
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Cut the tops off the tomatoes and scoop out the insides. Set aside.
- In a skillet, heat the vegetable oil over medium heat. Add the ground beef, onion, bell pepper, and garlic. Cook until the meat is browned and the vegetables are tender.
- Stir in the cooked rice, thyme, paprika, salt, and pepper. Cook for an additional 5 minutes.
- Preheat the oven to 375°F (190°C).
- Stuff the hollowed-out tomatoes with the meat mixture and place them in a baking dish.
- Bake for 25-30 minutes until the tomatoes are tender.
