Ingredients

  • 4 large tomatoes
  • 1 pound ground beef
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1/2 cup cooked rice
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Cut the tops off the tomatoes and scoop out the insides. Set aside.
  2. In a skillet, heat the vegetable oil over medium heat. Add the ground beef, onion, bell pepper, and garlic. Cook until the meat is browned and the vegetables are tender.
  3. Stir in the cooked rice, thyme, paprika, salt, and pepper. Cook for an additional 5 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. Stuff the hollowed-out tomatoes with the meat mixture and place them in a baking dish.
  6. Bake for 25-30 minutes until the tomatoes are tender.
