Ingredients

  • 4 large tomatoes
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 clove garlic, minced
  • 1/2 pound ground beef
  • 1/4 cup raisins
  • 1/4 cup black olives, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup cooked rice
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the seeds and pulp. Set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon.
  5. Stir in the raisins, olives, cumin, paprika, salt, and pepper. Cook for a few minutes to combine the flavors.
  6. Remove the skillet from the heat and stir in the cooked rice and parsley.
  7. Stuff the tomatoes with the beef and rice mixture and place them in a baking dish.
  8. Bake for 30-35 minutes, until the tomatoes are tender and the filling is heated through.
