Tomato Bhaat (tangy Tomato Rice)

Ingredients

  • 2 cups basmati rice
  • 4 large tomatoes, finely chopped
  • 1 onion, finely chopped
  • 2 green chilies, slit
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/4 cup peanuts
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Wash the rice and cook it in a rice cooker or a pot. Fluff the rice with a fork and set aside.
  2. Heat oil in a pan and add mustard seeds. Once they start to splutter, add the peanuts and sauté until they turn golden brown.
  3. Add the chopped onions and green chilies. Sauté until the onions turn translucent.
  4. Now, add the finely chopped tomatoes and cook until they turn mushy.
  5. Stir in the turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes.
  6. Add the cooked rice to the tomato mixture and gently mix until well combined.
  7. Garnish with fresh coriander leaves and serve hot.
