Tomato Flatbread (coca De Tomate)

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 packet active dry yeast
  • 1/2 cup warm water
  • 4 ripe tomatoes, sliced
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the flour, salt, and sugar. In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes.
  2. Add the yeast mixture to the flour and knead the dough until smooth. Cover the bowl with a kitchen towel and let the dough rise for 1 hour.
  3. Preheat the oven to 400°F (200°C). Roll out the dough into a flat rectangle and transfer it to a baking sheet.
  4. Arrange the tomato slices on top of the dough. Drizzle with olive oil and sprinkle with garlic, basil, salt, and pepper.
  5. Bake for 20 minutes, or until the flatbread is golden brown and the tomatoes are tender.
  6. Slice the flatbread and serve warm.
