Tomato Flatbread (coca De Tomate)
This traditional Valencian dish is a delicious and easy-to-make flatbread topped with fresh tomatoes, olive oil, and herbs. It's perfect for a light lunch or as an appetizer for a Mediterranean-inspired meal.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 packet active dry yeast
- 1/2 cup warm water
- 4 ripe tomatoes, sliced
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh basil, chopped
- Salt and pepper to taste
Instructions
- In a large bowl, mix the flour, salt, and sugar. In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes.
- Add the yeast mixture to the flour and knead the dough until smooth. Cover the bowl with a kitchen towel and let the dough rise for 1 hour.
- Preheat the oven to 400°F (200°C). Roll out the dough into a flat rectangle and transfer it to a baking sheet.
- Arrange the tomato slices on top of the dough. Drizzle with olive oil and sprinkle with garlic, basil, salt, and pepper.
- Bake for 20 minutes, or until the flatbread is golden brown and the tomatoes are tender.
- Slice the flatbread and serve warm.
