Tomato Gojju (tangy Tomato Gojju)

Ingredients

  • 4 large tomatoes, chopped
  • 1 onion, finely chopped
  • 2-3 green chilies, slit
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp jaggery
  • Salt to taste
  • 2 tbsp oil
  • Few curry leaves
  • 1/2 cup water

Instructions

  1. Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds and curry leaves.
  2. Add chopped onions and green chilies. Saute until the onions turn translucent.
  3. Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes turn mushy.
  4. Add jaggery and water. Mix well and let it simmer for 5-7 minutes.
  5. Tomato Gojju is ready to be served.
