Tomato Rice (nasi Tomato)

Ingredients
- 2 cups of long-grain white rice
- 1 can (14 oz) of diced tomatoes
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon of ground turmeric
- 1 teaspoon of ground cumin
- 1 teaspoon of chili powder
- 2 cups of vegetable broth
- Salt to taste
- Pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the ground turmeric, ground cumin, and chili powder to the pot, and stir to combine with the onions and garlic.
- Next, add the diced tomatoes and cook for a few minutes until the tomatoes start to break down.
- Stir in the long-grain white rice until it is well coated with the tomato mixture.
- Pour in the vegetable broth and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and garnish with fresh cilantro before serving.
