Tomato Rice (nasi Tomato)

Ingredients

  • 2 cups of long-grain white rice
  • 1 can (14 oz) of diced tomatoes
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of ground cumin
  • 1 teaspoon of chili powder
  • 2 cups of vegetable broth
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  2. Add the ground turmeric, ground cumin, and chili powder to the pot, and stir to combine with the onions and garlic.
  3. Next, add the diced tomatoes and cook for a few minutes until the tomatoes start to break down.
  4. Stir in the long-grain white rice until it is well coated with the tomato mixture.
  5. Pour in the vegetable broth and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
  6. Fluff the rice with a fork and garnish with fresh cilantro before serving.
