Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup heavy cream
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter
  • 1 teaspoon sea salt
  • 8 ounces semisweet chocolate, chopped

Instructions

  1. In a food processor, pulse together the flour, cold cubed butter, sugar, and salt until the mixture resembles coarse crumbs.
  2. Press the mixture into the bottom and up the sides of a 9-inch tart pan. Chill the crust for 30 minutes.
  3. Preheat the oven to 375°F (190°C). Bake the crust for 15-20 minutes, or until golden brown. Let it cool completely.
  4. In a saucepan, heat the heavy cream until just simmering. In another heavy-bottomed saucepan, melt the granulated sugar over medium heat, stirring constantly until it turns into a golden caramel color.
  5. Remove the caramel from the heat and carefully whisk in the butter and sea salt until smooth. Pour the caramel into the cooled tart shell and refrigerate for 30 minutes.
  6. In a heatproof bowl set over a pan of simmering water, melt the chopped chocolate, stirring until smooth. Pour the melted chocolate over the set caramel layer and spread evenly.
  7. Refrigerate the tart for at least 2 hours, or until the chocolate is set. Serve and enjoy!
