Torshi (armenian Pickled Vegetables)
Torshi is a traditional Armenian dish of pickled vegetables, packed with bold flavors and crunchy textures. This recipe is a great way to preserve the vibrant flavors of summer produce to enjoy throughout the year.
Ingredients
- 1 large cucumber, sliced
- 2 carrots, julienned
- 1 red bell pepper, sliced
- 1 cup cauliflower florets
- 1 cup green beans, trimmed
- 1 cup white vinegar
- 1 cup water
- 2 tablespoons salt
- 2 cloves garlic, crushed
- 1 teaspoon black peppercorns
- 1 teaspoon coriander seeds
- 1 teaspoon mustard seeds
Instructions
- In a large pot, combine the vinegar, water, salt, garlic, and spices. Bring to a boil.
- Add the prepared vegetables to the pot and cook for 5 minutes, until slightly tender.
- Remove the pot from the heat and let the mixture cool to room temperature.
- Transfer the pickled vegetables and liquid to a clean, airtight container and refrigerate for at least 24 hours before serving.
