Ingredients

  • 1 large cucumber, sliced
  • 2 carrots, julienned
  • 1 red bell pepper, sliced
  • 1 cup cauliflower florets
  • 1 cup green beans, trimmed
  • 1 cup white vinegar
  • 1 cup water
  • 2 tablespoons salt
  • 2 cloves garlic, crushed
  • 1 teaspoon black peppercorns
  • 1 teaspoon coriander seeds
  • 1 teaspoon mustard seeds

Instructions

  1. In a large pot, combine the vinegar, water, salt, garlic, and spices. Bring to a boil.
  2. Add the prepared vegetables to the pot and cook for 5 minutes, until slightly tender.
  3. Remove the pot from the heat and let the mixture cool to room temperature.
  4. Transfer the pickled vegetables and liquid to a clean, airtight container and refrigerate for at least 24 hours before serving.
