Tort De Nuci (aromanian Walnut Cake)
Tort de nuci, also known as Aromanian Walnut Cake, is a traditional dessert from the Aromanian cuisine. This delicious cake is made with layers of sponge cake and a rich walnut filling, creating a perfect balance of sweetness and nuttiness.
Ingredients
- 4 eggs
- 1 cup sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 cup walnuts, finely chopped
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, beat the eggs and sugar until light and fluffy. Gradually add the flour and baking powder, and mix until well combined.
- Divide the batter evenly between the prepared cake pans. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely.
- In a saucepan, combine the milk and vanilla extract. Heat over medium heat until steaming, but not boiling.
- In a separate saucepan, melt the butter over low heat. Add the chopped walnuts and cook, stirring constantly, for 2-3 minutes. Pour in the hot milk and stir until well combined. Remove from heat and let the mixture cool.
- In a mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.
- To assemble the cake, place one layer of the sponge cake on a serving plate. Spread half of the walnut filling over the cake, then top with half of the whipped cream. Place the second cake layer on top and repeat the filling and cream layers.
- Refrigerate the cake for at least 2 hours before serving. Garnish with additional chopped walnuts, if desired.
